About the role
We are currently recruiting for Sous Chef for one of the most dynamic and exciting leisure venues in Doha. West Bay beach, under the management of Discover Qatar, comprises 3 absolute beachfront fully licensed venues.
You will be responsible to ensure that the food used is of top quality of a five-star standard and cost efficient by constantly liaising with culinary support team & line manager. It is also required to implement the procedures set by the line manager and inform staff of their importance in the industry. This role is responsible to communicate professionally among team in all situations and authoritatively delegate job tasks to Chef De Parties and Demi Chef De Parties as and when operations demand to ensure continuous operation.
Other key responsibilities are:
Operational
– Maintain menu specifications standards, ensuring buffet and outlet SOP’s are followed chefs at all times.
– Ensure correct methods are used for preparation of food and to check presentation.
– Plan and direct food preparation and service in all the lounge kitchens with line manager.
– Constantly check quality and quantity of food going out of the kitchen to make sure an efficient, smooth and quick service to customers while maintaining five-star standards.
– Effectively control food production by giving maximum quality, yield and managing wastage. Ensure each section is controlling Mise-En-Place quality, quantity and is storing it correctly.
– Assist line manager in forecasting food consumption and order WBB food requirements in an economical and efficient manner.
– Support internal communications requirements linking kitchen personnel with other operating departments.
– Ensure that the kitchen is organized and run to the highest possible levels of safety and hygiene.
– Maintain a high standard of personal hygiene and appearance at all times within the team.
– Receive inspection of food coming into the kitchen for quality, quantity and food safety compliance.
– Control all food storage activities to ensure that all food is kept in prime condition and a good method stock rotation is used in all areas and sections of the kitchen.
– Ensure that all maintenance requests are reported to the support services team in time on discovery in order to provide timely solution ensuring all such records are accurately kept.
– Ensure that the team is manned efficiently by providing update to the line manager and that the Chefs De Partie, Demi Chefs De Partie, Commis Chefs and Stewards are working to the best of their ability.
– Monitor staff compliance with prescribed operating methods and exercise necessary control to ensure security of stock and property of the Company.
– Ensure health and safety training is completed and recorded in line with the Company guidelines.
– Responsible to train and bring up to speed the newly joined and underperforming staff members.
– Keep the staff motivated and united bringing about healthy competition.
– Perform other department duties related to his/her position as directed by the Head of the Department.
Qualifications
About You
– Bachelor’s Degree with minimum 3 years of job- related experience
– GCC Experience is preferred
– Command of English Language
– Human Resource management skills, including the ability to train employees
– Financial management and computer skills
– Time management, communication and Leadership skills
– Situational awareness and a command presence
– Friendly and courteous to staff, management and customers at all times
– Managerial skills – Ability to delegate work, set clear direction and manage workflow. Strong mentoring and coaching skills. Ability to train and develop subordinate’s skills. Ability to foster teamwork among team members.
