1. Directs, supervises, co-ordinates & controls the operations of the following sections/department:
A) Telephone:
Ensure that operators are adhering to standard operational procedures as staying awake on duty.
˜ Guest wake up call.
˜ Update DND.
˜ Daily activity (function board).
˜ Making bills of the phone calls made through 151 e.g. 3 minutes call of I/L.
˜ No one allowed to sit in the operator room at any time.
B) Reception
Ensure that night receptionists have cleared key rack of outstanding guest message, telexes, mail, etc.
Check if all statistical reports are completed accurately.
˜ Handle guest complains & request.
C) Staff Cafeteria
Check of the food quality, cleanliness, & place.
Ensure that food handlers adhere to the food Hygiene Regulations at all times.
D) Security
Check points with the clock
Tided security control

˜ 3 Night 2300 – 0730
E)Kitchen
˜ Must Provide good quality of food at all times
˜ Regular & spot check required.
˜ Not to allow any food & drink without approved of Duty Manager
˜ Check the maintenance & cleanliness of the kitchen range & dishwashing area
˜ Ensure that food handlers adhere to the Food hygiene Regulations at all times
˜ Food control
˜ Check all the fridges storage & cleanliness
F) Stewarding
Ensuring cleanliness of the kitchen & equipment.
G) Porters
˜ Check Limo book (cross check name each shift of guest & time of flight details)
˜ Control newspaper list
˜ Check all limo cars are well maintained
café Restaurant
˜ Ensures quality service
˜ Handle customers individual & groups well
˜ Mis-en-place for buffet
˜ Knowledge of the food menu items
˜ Supervises the early morning breakfast buffet
˜ Ensures that food handlers adhere to the Food hygiene Regulations at all times
I) Rooms Service
˜ Ensure that all breakfast door knobs have been collected by 5am & that trays are being prepared accordingly
˜ Ensure that food handlers adhere to the Food Hygiene Regulations at all times
˜ Check fridges regularly
˜ Help when it is busy
J) Other Food and Beverage areas
Check if doors of ALL restaurants and F&B Office closed, turns off lights deemed to be unnecessary.
K) Other areas
˜ Staff drivers are going on time as per schedule
˜ Health club to be open at 0700 for Gents & ladies
˜ Executive floor butler to come in at 0600 to set up for breakfast.
L) House Keeping
˜ Checks if night cleaners have satisfactorily done their work according to required standards.
˜ Checks the cleanliness of the public area, function rooms & check-out rooms
2) Ensures that all night staff are observing the following:
˜ Maintaining the service standards set by the hotel
˜ Adherence to the code of discipline set by the hotel
˜ Adherence to company Fire Procedure in case there is an occurrence of fire
3) Checks if the licensing law rules are observed; sees to it that bar is closed on time but only ordering thru room service alcohol can be served with the menu items to be served
4) Hands over all keys & endorses to the morning Duty Manager any action to be taken concerning the operations
5) Deals with customer complains in a tactful manner & reports them to the Rooms Division Manager
6) Checks & inspects the back of the house & public areas for cleanliness; checks all the floors in the South Wing & Tower Block for any uncollected dishes & trays.
7) Co-ordinates & participates in the work of the night receptionist, cashiers, operators, auditors, room service, café restaurant & the porters
8) Prepares the forecast report.
9) Controls the movement of the guest & staff using the public area; keeps watch on intoxicated persons & ladies of ill-reputed for & occurrences or untoward incidents detrimental to the hotel operations.
